This recipe makes an even dozen. Double it if you’re serving a crowd (or if your family loves them as much as mine)!

These creative deviled eggs make the best holiday party appetizers, Christmas Eve brunch or dinner, and family potluck side dish.
The avocado not only provides a natural green color, it also creates extra filling to shape the trees. Everyone will love these deviled eggs with avocado recipe-even the kids!

I developed this healthy holiday appetizer for my annual Holiday Cooking Show and shared a preview tasting with my planning committee. They went crazy over them and loved knowing they were getting healthy fats from the avocado without mayonnaise.
Another thing they appreciated was the not-so-fussy shortcut option of using a little triangle of yellow bell pepper on top instead of having to buy a tiny star cutter.

Shortcuts
- No need for a mini star-shaped cutter for the star on top of the "tree". I also just cut a triangle out of the yellow bell pepper and at a glance, it looks like a starry tree topper.
- Cook the eggs in the Instant Pot – It speeds things up and gives you consistently easy-to-peel eggs. If you don’t have one, scroll down for the best stovetop method for hard cooked eggs.
- Skip the piping tip if needed – A zip-top bag with the corner snipped works well for shaping the trees if you don’t have a pastry bag and tip on hand.
Fix it Faster
No time to boil eggs? You can buy boiled (hard cooked) eggs in the dairy case right next to the cartons of fresh eggs.
Ingredients
These Christmas deviled eggs are made with avocado. Be sure to get a ripe one to avoid lumps in the mixture.

- Large eggs – Hard-cooked eggs can be made a day ahead. Keep them in their shells until you’re ready to assemble.
- Ripe avocado – If you can’t find ripe avocados in time, place them in a brown paper bag with a banana. They’ll usually ripen within a day or two.
- Garlic salt – A little goes a long way. Start with the recipe amount and adjust at the end if you want more seasoning. You can also just use table salt.
- Lime juice – You can also use apple cider vinegar or lemon juice for a bright pop of flavor in your Christmas deviled eggs.
- Green food coloring – Use this additional coloring to give your trees a smooth, even color. It’s optional, though! The avocado already gives plenty of natural green color.
- Bell peppers – Don’t forget to pat the pepper pieces dry with a paper towel before decorating. Extra moisture can make the filling watery.
Substitutions & Variations
- Paprika – Even just a light dusting of paprika can give your creative deviled eggs an elegant look. It’s an easy swap if you don’t have bell peppers on hand for ornaments.
- Dijon mustard – It’s milder than yellow mustard but if you must use yellow mustard, know that it will make the hue of your trees slightly lighter.
- Finely grated Asiago cheese – Don’t have Parmesan? Use a sprinkle of Asiago for a slightly nuttier and sharper flavor.
- Minced red jalapeño pepper – Use minced red jalapeño in place of sweet red pepper for a bit of heat. Just be sure to let guests know they’re spicy so no one gets surprised!
How to make these colored deviled eggs

- Boil 6 large eggs, cool in ice water, and peel.
- Slice the eggs crosswise for rounder halves, and trim the bottoms slightly so they don’t wobble.


- Mash the yolks with avocado, Dijon, lime juice, and garlic salt until smooth and green. Here's where you will add green food coloring if you want a more intense green color.
- Then, spoon the avocado-yolk mixture into a pastry bag fitted with a piping tip. You can also fill a zip-top plastic bag and snip the corner out for a more rounded tree.


- Pipe the mixture into the cooked egg white "bowls" to form little trees.
You can use star-shaped cutters and disposable pastry bags fitted with a size 1M fluted piping tip.


- Decorate with red pepper "ornaments", yellow pepper stars, and a dusting of Parmesan "snow".
Tip: You don't have to buy star-shaped cutters. You can also just cut out triangles of the yellow bell peppers for a simplified look.

- Serve chilled and enjoy these deviled eggs for Christmas with your family and friends!
Make Ahead- I don't recommend making these the night before serving because the avocado will start to turn dark. But, you can store the piping bag of avocado mixture in the fridge overnight, then pipe the trees before serving.
Pro Tip
If you want a brighter green color on your avocado deviled eggs, don’t skip the vinegar or lime juice. They help slow down the browning of the avocado mixture.
Cut and prep garnishes ahead. Slice tiny yellow pepper stars and mince the red pepper ornaments the day before, and just store them in the fridge in a zip-top bag.
Calories for deviled eggs depend on the amount of each ingredient added to the egg yolks, the average deviled egg will have about 77 calories per deviled egg half.
Compare that to these Christmas deviled eggs made with avocado and no mayo that are only 57 calories each.

How to Store
Place your deviled eggs in a single layer in an airtight container. They are best served the same day they are made, as the avocado will begin to darken after a few hours.

Christmas Tree Deviled Eggs (with Avocado)

Ingredients
- 6 large eggs
- ⅔ to ¾ cup mashed very ripe avocado (about 1 medium avocado)
- ¼ teaspoon garlic salt
- 2 teaspoons Dijon mustard
- 2 teaspoons lime juice, apple cider vinegar, or lemon juice
- Green food coloring for more intense green color (optional)
- 1 small yellow or orange bell pepper
- 1 tablespoon minced red bell pepper or mini sweet red pepper
- Grated Parmesan cheese
Instructions
Boil the Eggs
- Add about 4 cups of water to a 3-quart saucepan. (The water should completely cover the eggs when added.)
- Bring the water to a boil, then gently lower the eggs one at a time into the boiling water using a large spoon.
- Partially cover the pan with a lid, and boil the eggs for 12 minutes.
- Drain the eggs and immediately transfer them to a bowl of ice water for five minutes.
- Tap the eggshells on the counter and gently roll them around. The shells should peel off easily.
Make the Christmas Tree Deviled Eggs
- Cut the boiled, peeled eggs in half crosswise instead of lengthwise. This creates a more rounded half rather than an oval.
- If desired, slice a tiny bit off the bottoms of the egg halves to keep them from wobbling. Place the egg white "bowls" on your serving platter.
- *In a food processor, blender, or large mixing bowl with an electric mixer, combine the yolks, avocado, lime juice, mustard, and garlic salt. Process until smooth.
- (Optional) Add a drop or two of green food coloring for a brighter green color.
- For fluted Christmas trees: Spoon the filling into a pastry bag fitted with a size 1M fluted piping tip.
- For smooth Christmas trees: Spoon the filling into a pastry bag or snip ¼ to ½ inch off the corner of a large plastic zip-top bag.
- To form the trees, place the tip of the bag into the “bowl” of each egg white.
- Fluted trees: Pipe the filling so it almost fills the egg white, then release pressure while pulling upward to form a pyramid shape.
- Smooth trees: Pipe the filling with three up-and-down motions, releasing pressure at the top to form a tree shape.
- Use tweezers or a toothpick to decorate the trees with minced red pepper.
- Cut out 12 small stars from the yellow bell pepper using a paring knife or star-shaped cutter. You can also cut out triangles if you don't have a star cutter.Place one on top of each tree.
- Finish with a dusting of Parmesan cheese to resemble snow. Serve chilled and enjoy your holiday deviled eggs!
