Christmas tree-shaped deviled eggs are creamy, colorful, and made with avocado, no mayo. A holiday twist on a Southern classic appetizer or side dish. These creative appetizers cost under $5 for 12 servings.
⅔ to ¾cupmashed very ripe avocado(about 1 medium avocado)
¼teaspoongarlic salt
2teaspoonsDijon mustard
2teaspoonslime juice, apple cider vinegar, or lemon juice
Green food coloring for more intense green color(optional)
1small yellow or orange bell pepper
1tablespoonminced red bell pepper or mini sweet red pepper
Grated Parmesan cheese
Instructions
Boil the Eggs
Add about 4 cups of water to a 3-quart saucepan. (The water should completely cover the eggs when added.)
Bring the water to a boil, then gently lower the eggs one at a time into the boiling water using a large spoon.
Partially cover the pan with a lid, and boil the eggs for 12 minutes.
Drain the eggs and immediately transfer them to a bowl of ice water for five minutes.
Tap the eggshells on the counter and gently roll them around. The shells should peel off easily.
Make the Christmas Tree Deviled Eggs
Cut the boiled, peeled eggs in half crosswise instead of lengthwise. This creates a more rounded half rather than an oval.
If desired, slice a tiny bit off the bottoms of the egg halves to keep them from wobbling. Place the egg white "bowls" on your serving platter.
*In a food processor, blender, or large mixing bowl with an electric mixer, combine the yolks, avocado, lime juice, mustard, and garlic salt. Process until smooth.
(Optional) Add a drop or two of green food coloring for a brighter green color.
For fluted Christmas trees: Spoon the filling into a pastry bag fitted with a size 1M fluted piping tip.
For smooth Christmas trees: Spoon the filling into a pastry bag or snip ¼ to ½ inch off the corner of a large plastic zip-top bag.
To form the trees, place the tip of the bag into the “bowl” of each egg white.
Fluted trees: Pipe the filling so it almost fills the egg white, then release pressure while pulling upward to form a pyramid shape.
Smooth trees: Pipe the filling with three up-and-down motions, releasing pressure at the top to form a tree shape.
Use tweezers or a toothpick to decorate the trees with minced red pepper.
Cut out 12 small stars from the yellow bell pepper using a paring knife or star-shaped cutter. You can also cut out triangles if you don't have a star cutter.Place one on top of each tree.
Finish with a dusting of Parmesan cheese to resemble snow. Serve chilled and enjoy your holiday deviled eggs!
Notes
*You can mash everything together with a potato masher or fork if you don’t have a food processor. The filling may be a bit chunkier, but it will still pipe into the egg whites.They are best served the same day they are made, as the avocado will begin to darken after a few hours.
