    2 Ingredient Pumpkin Pie Minis

    This easy 2 Ingredient Pumpkin Pie Minis recipe is a shortcut (no-cook) dessert recipe. It will be your go-to for a bite-size dessert recipe for all your Thanksgiving and Christmas parties!

    This shortcut recipe is genius and you will want to share it with everyone you know....or it can be our little secret and your guests can think you spent hours making the pumpkin pie from scratch in special molds.

    Do I need a special  mold to make these?

    No. Cut them out with a cookie cutter from a regular size pumpkin pie! These 2 Ingredient Pumpkin Pie Minis look like a pastry chef spent hours making the pie in tart pans but I'm going to share my secret with you.

    What are the 2 ingredients in Pumpkin Pie Minis?

    Pumpkin pie and Reddi Wip. It's that simple. Keep reading and I'll give you some more options but that's what you see in the picture!

    Do you make your own pumpkin pie for this recipe?

    No. This recipe idea was born out of necessity. I needed a quick dessert to take to a party and had little to no time to make a homemade pie. Plus, I needed more of a "pick up/finger food" dessert.

    Here's 5 pie options to choose from:

    1. Frozen (already cooked) pumpkin pie, thawed
    2. Frozen, ready-to-cook, pumpkin pie. Bake according to directions. Let cool completely. Refrigerate until very cold.
    3. Pumpkin or sweet potato pies from the Walmart bakery "day old" cart. The dates are still good, they just made too many. I buy them and throw them in the freezer until I'm ready to use them. Refrigerate until very cold.
    4. Freeze leftover pies from Thanksgiving to plan ahead for a Christmas party. Or, make an extra pie at Thanksgiving while you're already making pies, and freeze for Christmas or New Years.
    5. Lastly, if you really want to make your own pumpkin pie with your favorite recipe, you absolutely can. Make the pie, let it cool and refrigerate until very cold.

    How do I cut the perfect circles like yours?

    It's easy. Make sure your pie is very cold. I made these on stage during my recent Holiday Cooking Show and the pie had become almost room temperature.

    The pie stuck to the cookie cutter a little so I had to use a spoon to help push it out. If you have to do this, no worries. Just cover up where you pushed it out with the Reddi Wip or whipped cream!

    Another tip is to use a tall circle cookie cutter or biscuit cutter that doesn't have a ridge at the top. Many biscuit cutters have a "top" on them. This will mash down the top of your pie.

    If you use a cutter that is shorter than your pie and it has a ridge on it, your sides won't cut quite as cleanly.

    Here's a nice set of circle cookie cutters with many sizes to choose.

    You can change the portion size of the pies by changing the size of the cookie cutters. You can see above that I used two different sizes.

    If you want to serve them as individual desserts instead of bite-size party food, increase the size to 2 -inches or larger. You may need to buy more pie!

    How many mini pie bites can I get from one pie?

    Using a 1 ½-inch cookie cutter, you can expect to get about 10 or 11 from a 9-inch pie. The sweet potato pies from Walmart were smaller so I bought two of them...but they were only $1.99!

    Can I make 2 Ingredient Pumpkin Pie Minis with another kind of pie?

    Yes and no. Sweet potato, absolutely. They are interchangeable. Key lime and lemon pie, yes!

    Apple pie, probably not. You won't be able to get as clean a cut because the apples will be harder to cut with the cutter. You might try cutting the pie partially frozen get decent results.

    Can I use whipped cream instead of Reddi Wip?

    Yep! You can use Cool Whip, homemade whipped cream or even Almond milk Reddi Wip!

    This is a shortcut recipe. You can make halfway homemade or homemade all the way, if you choose.

    Equipment

    • Round cookie cutter (1 ½-inches)

    Ingredients
      

    • 1 9-inch cooked pumpkin or sweet potato pie store bought
    • Reddi Wip or Cool Whip

    Instructions
     

    • Press a 1 ½-inch round cookie cutter into the cooked and chilled pie, turning back and forth gently to cut through to the bottom of the crust. If the cutter does not remove easily, use a spoon or offset spatula to gently press down in the middle of the cut out.
    • Place the cut out pie bites on a serving tray and decorate with Reddi Wip or Cool Whip.

        They can be cut a day or two ahead of time if kept covered until serving. It's the whipped cream I would wait to put on right before serving.

      Hi. I’m wondering how you serve them. Do you use a small spatula or “light-handed” tongs?

        If you have a small thin serving spatula, that would work best. Maybe have a nice table knife or spoon with it to put on the other side of the pumpkin pie mini to hold it in place while sliding the spatula underneath it. I have a pair of tiny serving tongs that have a claw-type end that helps grip it when I hold it straight over the top and grip the bottom crust and lift straight up.

        Yes, you absolutely can cut out the shapes the day before. You can place them on a plate and cover loosely with foil or put them in a large plastic container or cake dome and store in the fridge until ready to decorate with Redi Wip. Wait til last minute to use Redi Wip, it "melts". Cool Whip dollops will hold up longer.

        Thank you for this question! I need to add these suggestions to the blog post. The first idea that comes to mind is to make a pumpkin pie smoothie or milkshake. I'v seen them made with crumbled pies of all kinds-including the pie crust. I love the idea of stirring the cooked pumpkin pie filling into maple oatmeal for breakfast. Be sure to cut the circles close together so you won't have much leftover, too.

        I think you mash the leftovers together into little cake pop shaped balls then dip them in the candy melts for a quick treat.
