    No-Cook Key Lime Pie Popsicles

    No-Cook Key Lime Pie Popsicles are basically a frozen key lime pie on a stick! Easy portable pieces of pie. Yes please!!! Sweet and tangy, no-bake dessert, and only 3 ingredients in the shortcut filling! I didn't even forget the graham cracker pie crust!

    You heard right. You don't even have to heat up the stove to make these easy, frozen popsicle desserts! That's always a bonus here in Alabama where the summers are hot and humid.

    What you'll need to make No-Cook Key Lime Pie Popsicles

    • 1 can sweetened condensed milk
    • ⅔ cup key lime or lime juice
    • Cool Whip or sweetened whipped cream
    • Key lime slices (optional)
    • 3 tablespoons graham cracker crumbs
    • 9 popsicle sticks

    Can I leave out the lime slice?

    Yes. It is just a garnish to mimic the slice of lime typically put on a key lime pie. I put the lime slice on the inside of the popsicle mold before spooning in the filling.

    It's totally optional, though. It freezes to the popsicle when unmolded. It easily pulls off just before eating and mimics the typical slice of lim garnish on a Key Lime Pie.

    How many key limes does it take to make the popsicles?

    I squeezed all 22 of the little key limes but feel free to use it's larger cousin, the Persian/Tahitian limes. Those are the most common in the grocery store. It takes fewer darker green Persian limes. They also cost less.

    Can I use bottled key lime juice?

    Yes. You will find it in the fruit juice aisle next to the lemon juice or sometimes in the canned fruit section of your grocery store. Since key limes are not available all year round, this is a good option when you are craving key lime pie in the winter.

    If you can't find bottled key lime juice, reconstituted lime juice will work in a pinch, but it has a slightly bitter taste in my opinion.

    What's the shortcut?

    You don't have to cook the filling! Most key lime fillings are made with egg yolks that need to be either heated and tempered or baked.

    It can't get much easier than this to make a refreshing summer treat and they are hands down better than anything you'll find on the ice cream truck!

    Equipment

    • popsicle molds and sticks

    Ingredients
      

    • 1 (14-oz) can sweetened condensed milk Fat-free can be used
    • ⅔ cup freshly squeezed key lime juice or bottled key lime juice about 22 key limes or 9 limes
    • 1 ½ cups Cool Whip, divided or Sweetened Whipped Cream
    • 9 thin key lime slices optional
    • 3 tablespoons graham cracker crumbs
    • 9 popsicle sticks

    Instructions
     

    • Combine sweetened condensed milk and lime juice in a bowl; stir in ½ cup Cool Whip.
    • Press one lime slice into the inside of each popsicle mold about halfway down. This is optional and is just for garnish.
    • Spoon mixture into nine popsicle molds. The mixture will be a little thick so tap the molds on the counter slightly to remove any air pockets.
    • Spoon about one tablespoon remaining whipped cream on top of lime mixture and top with about one teaspoon graham cracker crumbs, pressing crumbs gently into the whipped cream mixture so they won’t fall off when unmolded. Press popsicle sticks down the middle of the mixture.
    • Freeze at least 3 hours or until completely frozen.
    • Lower popsicle molds down into a large bowl of very warm but not hot water for about 30 seconds. Gently rock the popsicle sticks back and forth while pulling up to remove the popsicles from the molds. Enjoy immediately! Don't forget to remove the lime slice before eating.

    Notes

    Tips:
    It takes 22 fresh key limes for this recipe. You can also use fresh Persian limes (darker green and larger).
    You can substitute bottled key lime or regular lime juice for fresh juice.

      I made this in pie form this summer and popped it in the freezer to pull out during my busy season - when I need a delicious dessert. This did the trick!!! I used a graham cracker crust- it’s crazy good!!! So light and refreshing!
