This Air Fryer Baked Potatoes recipe makes them perfectly crisp on the outside and light and fluffy on the inside. Made with just 3 ingredients and 3 minutes prep, this easy air fryer method is one of my favorite ways to cook potatoes any night of the week.
2teaspoonsolive oil(vegetable oil, or other oil like avocado)
¾teaspoonkosher salt or about ¼ teaspoon table salt
Butter, sour cream, and chives(optional)
Instructions
Preheat the air fryer to 375F° for 3 minutes.
Wash and pat dry the potatoes. With the tines of a fork, poke holes evenly all over the potatoes about ¼-inch deep.
Rub about 1 teaspoon of oil all over the potatoes. Sprinkle evenly with salt, pressing it onto the oiled potato to get it to stick.
Cook on the Air Fry setting at 375F° for about 35 minutes, depending on the size of your potatoes.Pro Tip: Test for doneness by inserting a table knife or the tines of a fork to the center of the potato. If it goes in easily, it’s done.
Carefully remove the potatoes from the oven or air fryer with tongs onto a cutting board. Let them stand at room temperature for about 5 minutes to cool down slightly.

Pro tips:
Dry the potatoes really well. After washing, pat the potatoes completely dry with a kitchen towel. Any moisture left on the skin will steam the potato instead of crisping it, and that crispy skin is half the magic here!
Give them space in the basket. Air fryers work best when hot air can circulate freely. If the potatoes are crowded or touching, they’ll cook unevenly and won’t get as crisp.
Let them rest before cutting. Allow the potatoes to sit for about 5 minutes after cooking. This gives the interior time to finish steaming and results in a fluffier, lighter texture inside.
