  • air fryer

  • 2 10-ounce Russet or other baking potatoes
  • 2 teaspoons olive oil or your favorite oil
  • 1/4 to 1/2 teaspoon salt
  • 1 cup smoked pulled pork or other cooked smoked meat
  • 1/2 to 3/4 cup barbecue sauce (choose your favorite)
  • Salt and pepper

  • Preheat your air fryer to 375F degrees for 3 minutes. My ROAST setting is 375F.
  • Wash and dry the potatoes. With a the tines of a fork, poke holes evenly all over the potatoes about 1/8-inch deep. About six times is plenty.
  • Rub about 1 teaspoon olive oil or your favorite oil all over the potatoes.Carefully place them in the air fryer. Cook them at 375F for about 35 minutes, depending on the size of you potatoes
  • Carefully remove the potatoes with tongs onto a cutting board. Let them stand at room temperature for about 10 minutes
  • While your potatoes are standing at room temperature for 10 minutes, reheat the pulled pork in the microwave for 1 minute at a time on HIGH just until hot.
  • I also like to heat up my bbq sauce but that may be personal preference.
  • With a sharp knife, cut slits in the top of the potatoes, holding the potato with a pot holder, to about halfway through the potato. You don't want to slice it in half.
  • Then, using two pot holders or a clean kitchen towel, push the two ends ofthe potato toward the center. This will fluff up your potato making it easier to eat and picture perfect.
  • Place the potato on the serving plate, sprinkle with salt and pepper, moundthe pork on top, and if you're like me, drench it all in bbq sauce!
